Date and fig rolls

A bit of Friday baking, sustenance for the Bank holiday weekend if you like. I love a fig roll but the supermarket variety is never very good so I was very happy to see Dan Lepard’s recipe for Date semolina bars in The Guardian last week. I made them just now, replacing some of the dates with figs and omitting orange blossom water (don’t have it and didn’t think it would be so necessary) and they are very good indeed:

Very easy to do and highly recommended. Semolina gives them a nice crunchy texture. Think these would be equally good with all sorts of dried fruit or fruit and nut combinations – apple, walnut and cinnamon springs to mind. Now if only the rain would stop…
