I made these mince pies last weekend to take to an early Christmas family get together. Used Dan Lepard’s recipe for the pastry from Short and Sweet and used up old homemade mince meat. The pastry is very short and has cream cheese, these are also quite deep filled. Beloved kept thinking they were mini pork pies:
I gave the first batch away without trying any – we’d all eaten too much on the day to have them but I made double the amount of pastry so made another batch for us after work the next day. The mince meat, having been soaking in booze way past its bedtime is nice and boozy and the pastry is great. Still have a few left – can only have one at a time as they are rather big.
Have also got photos of the first Christmas pudding from last week, which I’ll post at some point soon.
