The alchemist’s chocolate cake

This is like eating a chocolate cloud, so light and just lovely! Having a fairly lazy day but still wanted to make a chocolate cake, haven’t had chocolate cake in ages. I’ve been eyeing the recipe for The alchemist’s chocolate cake in Dan Lepard’s How to bake for a while, looked interesting as the only fat content is a small amount of walnut oil, there isn’t too much sugar either and the moisture comes from tinned pears and pear juice, pears are purĂ©ed. Very quick and easy to make, so a perfect cake to do on a lazy day. Cracked a bit at the top so I sprinkled with icing sugar and cocoa powder. Of course, I didn’t wait until it cooled down to cut into it and try…

Going to spend rest of the afternoon reading George Eliot’s Daniel Deronda while waiting for sourdough to prove.
