Beloved was given a choice of different fruit cakes this weekend. I thought I’d bake something with fresh fruit as there is so much of it around at the moment. He picked Cheese and Apple cake because it’s made with cheddar and the combination sounded intriguing. It’s rather wonderful actually, lovely crumb and good texture. Made with Cox’s cooking apples (or rather 3/4 of an apple), almonds, cheddar and the usual ingredients, recipe from Leith’s Baking Bible, which I am loving at the moment.
Also currently have a sourdough ‘on the rise’, may be finished around 11pm/ midnight… Oh well, never mind, will just have to keep awake watching the last of the Olympics.
